Wow! It’s really hard to believe it’s been a month since I started this thing. Ironically, before I committed to the SooFoo30 Challenge, my plan was to start eating a low-carb diet. It wasn’t so much about trying to lose weight, just wanting to feel better and have more energy. So, admittedly, I had some reservations about my “great idea” to instead eat carbs 3 meals per day for 30 days. My honest concerns were that as I got further into the challenge, I’d start to feel more and more tired and would in fact gain weight, specifically body fat. On top of that, nearly everyone on our staff warned that I would likely hate SooFoo by the end. Nevertheless, a commitment is a commitment.
Fast forward 30 days, and I’m happy to report that I feel GREAT! I’m still within my normal weight range!! And, I still LOVE the taste of SooFoo!!! It goes to show that there’s a huge difference between good carbs and bad carbs. SooFoo’s combination of whole grains and lentils makes for a complex carbohydrate and a complete protein. I’m still waiting for official results back from the physical, but I’m betting on positive stats. And I am getting to learn my new city and love it! Obligatory dog photo:
Now, onto the food…
It was cold and rainy when I returned to San Francisco. So, how better to brighten up the day than staring out with a SooFoo omelette? Just a thing of beauty cooking in the pan. Kept it simple after my overall poor diet in NY — SooFoo, eggs, and salsa. Protein, fiber, and kick!
Later that morning, my day was brightened up a little more when a sweet, and very talented barista put a face to my cappuccino.
It turned out to be a long work day, so I needed a quickish dinner. Decided to make SooFoo with olive oil, garlic, and some melted cheddar cheese on top (which gave me an even better idea!). Quick, tasty, and mostly healthy.
Day 30 of the challenge had arrived and I was prepared to go out in style. To start things off, I went with my favorite SooFoo breakfast, and probably favorite SooFoo dish period, the SooFoo scramble. SooFoo, eggs, chopped red peppers and onions, avocado, and of course, hot sauce. Breakfast doesn’t get any better than this.
Without giving away any secrets, I’ll just say lunch involved some taste testing.
I got the idea for SooFoo & Cheese (like mac & cheese) from my dinner the night before. Can you believe it took me 30 days to try this?!? I actually didn’t know you could buy mac & cheese packets without the mac. Give a star to whoever thought of that!
Drumroll please…the final meal of the SooFoo30 Challenge. SooFoo & Cheese, with rosemary pork chops and steamed vegetables. Better than a restaurant DELICIOUS!!
Thanks to all who followed. I hope it’s provided some encouragement to try SooFoo, to try SooFoo in a different way, and to have more fun eating and living healthy in general. I’m sure it’s not the last you’ll hear from me, but for now I’m signing out. Gotta take the dog for a walk and get back to work! -Kyle
