SooFoo Vegan Greek Burgers












It’s almost Memorial Day and that means its time to eat more burgers!   Whether your a vegan looking for something new to try or a burger enthusiast who wants all burgers all the time, these tasty patties are for everyone!  Want to know how to make them?  Here’s the recipe:

SooFoo Greek Burgers

1 cup cooked SooFoo

2 Tbs. olive oil

1 small onion chopped

1/2 red bell pepper diced

4 cloves minced garlic

1 15 oz. can chickpeas, drained

1 cup parsley leaves

1/2 cup pitted kalamata olives

2 large eggs (or egg substitute)

2 tsp. ground cumin

1 tsp. ground coriander

1 tsp. salt

1/2 tsp. pepper

1 cup breadcrumbs

3/4 cup grated carrots

 1/2 tsp. baking powder

Heat olive oil in skillet, saute onion, bell pepper and garlic until soft. Blend chickpeas, parsley, olives, eggs, all spices in food processor until smooth. Stir chickpea mix, bread-crumbs and carrots into cooked SooFoo. Shape into patties. Brush patties with olive oil and cook on each side. Makes 10 patties.
