SooFoo Thai Rice Salad Recipe

 

SooFoo Thai Salad

 

4 cups cooked SooFoo

1 cup peanuts

4 teas. Sesame oil

3 teas. Crushed garlic

1 red onion finely shredded

½ teas. Cumin

½ teas. Coriander

¾ cup raisins

1 large carrot- shredded

1 cup shredded red cabbage

½ bunch cilantro finely chopped

4 Table. Soy sauce

4 Table. Rice vinegar

1 teas. Chili flakes

Saute onion, garlic, cumin and coriander until tender. Set aside.

In a large bowl mix dressing: Sesame oil, soy sauce, vinegar, chili flakes, cilantro. Add in SooFoo, carrots, cabbage, raisins, peanuts. Stir onion and garlic mix into SooFoo mixture. Serve chilled.
