SooFoo Salad with Crunchy Seeds & Almonds

SooFoo Demo Time!

Thanks to SooFoo Brand Ambassador Sonia for this amazing new salad recipe!  She’s been using it at SooFoo Demos the last couple of weeks and we love it.  Want to make it at home?  It’s so simple.

 

SooFoo Salad with Crunchy Seeds & Almonds Close Up

 

Here’s the recipe:

3 cups of SooFoo, chilled

1 cup of chives (fresh)

1/2 cup of green onions

2 Tbsp lemon juice

1 tsp salt

1 1/2 cups of zuchinni

1/3 cup of almonds

1/3 cup of sunflower seeds and/or pumpkin seeds

Make SooFoo as per the directions ont he package.  Let cool.  Mix all the ingredients together and serve anywhere from chilled to room temperature.  Enjoy!

    Tried this salad today at the WF demo table set up for Soofoo in Cupertino and it was so good. It had everything in it that I have been listing out to keep me healthy that I normally do not eat.
