SooFoo Morning Muffins

Inspired by this article it’s very important to know how SooFoo can play a critical role in your healthy diet, even at breakfast time.  “Research suggests that breakfast eaters are leaner than those who skip the morning meal” and that you’d like a breakfast to “provide at least 6 grams of fiber per serving, suggests Harvard Men’s Health Watch, but make sure your choice is low in sugar (less than 10 grams per serving.”  With that inspiration one of our n-house cooks created the SooFoo morning muffins.  These muffins are packed with fiber and protein, are relatively low in fat and contain fruit and veggies in every serving.  They are a breakfast super food!  Did we mention that they are delicious too?

SooFoo Morning Muffins


1 cup cooked SooFoo

1 ½ cups whole-wheat flour

1 teas. Baking powder

1 teas. Baking soda

½ teas. Salt

½ teas. Cinnamon

¼ teas. Nutmeg

¼ teas. Ginger

½ cup honey

1 egg

½ cup buttermilk

¼ cup vegetable oil

½ teas. Vanilla

1-14 ounce crushed pineapple, drained

¾ cup grated carrots

½ cup raisins


Preheat oven to 400 degrees. Lightly oil 12 muffin cups. Stir dry ingredients together in large mixing bowl (flour, baking powder,

Baking soda, salt, cinnamon, nutmeg, ginger). Stir in honey, egg,

Buttermilk, oil, vanilla, SooFoo. Stir in pineapple, carrots, raisins.

Stir well, trying not to overmix. Spoon batter into muffin cups.

Bake for 20 minutes or until done.

Makes 12 muffins.  Enjoy!
