Looking for something portable, healthy and declicious? We’ve created these SooFoo Spinach and Mushroom cups which can be served hot or cold. At only 83 calories per serving you won’t be weighed down but with SooFoo, eggs, spinach, onions and feta you’re eating something healthy and hearty! They are basically a portable quiche! Here is the recipe:
SooFoo Spinach and Mushroom Cups
1 cup cooked SooFoo
1 egg white
½ cup chopped spinach
¼ cup crumbled feta (we used reduced fat feta)
¼ cup chopped tomatoes
½ cup chopped mushrooms
1 green onion, diced
Salt and pepper to taste
Preheat oven to 350 degrees. Liberally spray a muffin tin with non-stick spray. Combine all ingredients in a bowl and mix well to combine.
Spoon SooFoo mixture to the top of each muffin cup. Bake for 20-25 minutes, until egg is set. Let cool for at least 5 minutes before removing from the muffin in. This recipe yielded us 7 SooFoo cups. If you use more or less vegetables, your yield may vary.
This is a totally customizable recipe and can be changed up to include your favorite ingredients. We recommend keeping the SooFoo, eggs, egg whites and green onion the same, but feel free to make alterations to suit your taste. We’ve tried zucchini, ham and cheddar, and next on our list will be a broccoli and cheddar cup.
