SooFoo Easy Fajitas

Yes, please!  Here’s the recipe, bachelor style…

 -Cooked SooFoo(piece of cake to cook.  Throw it in the rice cooker or a pot with some water and come back 45 minutes later)
-Canned cooked white breast chicken…it’s by the canned tuna (optional)
-Canned black beans
-Red and yellow bell peppers (if you don’t have both, it’s ok, but you’ll be “slumming” it)
-Onions
-Canned green chiles

 -Dash of chili powder, black pepper, and sea salt

SooFoo Fajitas Ingredients


Cookin instructions:
Sauté all together with 2 tablespoons or so of olive oil.  Cook until your mouth is watering and you MUST take a bite

Serve with:
-Tortillas (we used blue corn-pretty looking and healthy!)
-Lettuce
-Tomato
-Avocado
-Guacamole (yes, ask any Californian, you cannot have too much avocado!)
-Salsa and/or HOT sauce

More or less healthy and ridiculously delicious!  Guaranteed to impress the ladies 🙂
