Pan seared salmon, dressed with creamy tomato vodka sauce, complimented by a seasoned blend of SooFoo’s whole grains, lentils, and brown rice, and sautéed vegetables.
Sounds fancy, huh? Well, imagine having this delicious, nutritious, gourmet meal in less than 20 minutes, using no more than 2 pans.
2 fillets of Salmon
Cooked SooFoo (hint: since it takes about 45 minutes to cook, cook up a bag at a time. It stores for at least 2 weeks in the fridge and 2 months in the freezer and is easily reheated)
Fresh chopped vegetables
Vodka sauce (in a jar or can)
Teaspoon of minced garlic or garlic powder
Couple dashes of Italian herbs (we used McCormick brand)
Dash of black pepper
Dash of sea salt
4 tablespoons of olive oil
Pour 2 tbsp of olive oil in each of 2 pans; turn heat to medium-high
Place salmon fillets in one pan, add salt, pepper; cover
Add vegetables to other pan; stir frequently
After 5 minutes, add cooked SooFoo to chopped vegetables pan; add garlic and herbs (look for Garlic and Herb SooFoo coming soon); continue to stir frequently
After 8-10 minutes, remove cover from salmon and dress with vodka sauce; cover again
Continue to cook for about 5 minutes or until salmon is cooked through
That’s it! It’s done. Plate and serve. You’ll feel like you just competed on an episode of The Food Network’s “Chopped”…and no way are you getting chopped with a dish this good!
